Matachica Beach Resort - Ambergris Caye, BelizeIt’s about to get easier to book a beachfront stay at Matachica, the hippest and most polished boutique resort on Ambergris Caye in Belize. In June the much-lauded resort (most recently earning a Conde Nast Johansens award this year) will debut eight new stand alone Deluxe Beachfront Casitas. Each will be 50-75 square feet larger than the resort’s 11 existing accommodations with bigger bathrooms, more intimate and romantic verandahs and Frette linens and robes—all just steps away from the warm, calm and impossibly clear water of the Caribbean.

While they’re at it, Matachica (named after a particularly elegant species of petite palm tree) is also unveiling a brand new infinity edge pool and a new gym is planned for 2011.  Summer 2010 double occupancy rates for the new Deluxe Beachfront Casitas are $350 per night, while SeaBreeze Bungalows are $215 a night.

Matachica Beach Resort - Ambergris Caye, BelizeThis beach chic resort—where the young, hip, good-looking staff matches the resort’s clientele (many of them celebrating anniversaries or honeymoons)—also offers a pair of two bedroom and two bathroom villas ($525 up to four people) and one Beach Mansion with three bedrooms, three bathrooms and a full kitchen ($815 up to six people).  All rates are in US dollars and include transfers by private ground taxi and water taxi from the newly-remodeled airport in San Pedro, full breakfast (including delicious locally grown Gallon Jug coffee) and use of sea kayaks and snorkel gear.

The resort’s existing small pool may also be repurposed as additional dining space for the Matachica’s deservedly-popular restaurant, Mambo. If current talk pans out, guests may soon be able to enjoy their char-grilled peppercorn filet mignon, slow roasted lime grouper or homemade fettuccini di mare (do not miss this one) from a table set atop a plexi-glass cover over the pool—a first on the island.
